Delectable and Easy To Prepare Banana Breakfast Sandwiches

I personally love bananas and enjoy many different ways of eating them. We already know there are many uses for bananas from my earlier article (How to Put the Banana to Work for your Better Health). Here are three easy banana breakfast sandwiches that are pretty delectable, yet are very different from the standard breakfast menu. Hope they appeal to you and your appetite.

Cinnamon Banana Breakfast Sandwich

Ingredients:

8 slices - Whole Wheat Bread or Light Rye w/o Seeds
1 whole Banana (sliced)
1 tbsp melted Butter
2 tbsp – Sugar
1 tsp - Cinnamon
4 tbsp - Whipped Cream (fresh is best but canned works)

Oh so simple! And I can tell you it’s pretty darn good, too.

Mix your Cinnamon and Sugar well.

Next, brush both sides of your choice of Bread with the melted Butter.

Then, take the Cinnamon mixture and sprinkle over the Bread.

Broil for 3 minutes and get the Bread toasty.

Take out. Top piece of Bread with sliced Bananas and Whipped Cream. Plop on another piece of Bread. Do the same with the other slices. Sinfully yummy!

Author’s note: You can also try this without topping the single piece – instead, use just one piece of Bread and load it up. Fork and knife this delectable breakfast.

Grilled Banana Sandwich

Ingredients:

4 slices – Whole Grain Bread
1 large banana
1 1/2 tbsp – Low-Fat Cream Cheese (whipped)
1 1/2 tbsp - Peanut Butter
1 tbsp - Honey
Pinch of Salt
Canola Oil Spray

Peel banana. Cut 1/4 off. Using a fork, mash it up. Add to bowl. Also add Cream Cheese, Peanut Butter, Honey and Salt. Mix together well.

Spread this mixture equally on two of the bread slices.

Using some Spray Canola Oil, coat a large skillet. Set burner to medium high heat. Cut the remaining 3/4 of the Banana lengthwise in half, then crosswise in half. Put these pieces into the skillet and cook to caramelize them.

Remove Banana pieces from pan and arrange over the two mixture-spread pieces of bread. Top with last two pieces of Bread.

Now wipe out the skillet, add another coat of the Spray Canola Oil. Place pan on burner on medium heat.

Add the two loaded sandwiches. Cook until lightly browned and crisped on each side. Take care when turning.

French Toast Banana Breakfast Sandwich

Ingredients:

2 bananas
4 slices – Whole Wheat Bread or Multigrain Bread
2 Eggs
1/2 Eggs
1/2 Cup – Milk
1/2 tsp – Vanilla Extract
1/2 tsp – Ground Cinnamon
Pinch of Salt
1 tbsp – Butter
2 tbsp – Honey
1 tsp – Confectioners Sugar

Half the peeled Bananas in half crosswise, and again in half lengthwise. Use two of the slices of Bread, placing Banana pieces side by side. Top the Bread slices with the last two slices.

Put Eggs, Milk, Vanilla, Cinnamon and Salt in bowl. Blend with a whisk or fork.

Soak each sandwich in this mixture long enough to saturate (about a minute or two).

Melt the Butter over medium heat.

Put the soaked sandwiches into the skillet, and cook until the Bread turns golden brown. Flip the two sandwiches to the other side. Cook the second side until golden and crisp (about 2 or 3 minutes).

Finish by cutting the sandwiches into quarters. While still warm, drizzle Honey and Confectioners Sugar. Serve warm.
