Enjoy An Old Favorite Apple Cake Family Recipe

We are blessed with wonderful crops of apples in New England starting in mid-August. Orchards produce bountiful harvests of apples in countless varieties, and “put them to sleep” in cold storage until they “wake them up” for sale midway through winter and beyond, right up until spring.
With this delicious ingredient readily available, we use apples for many dishes and especially pies and cakes. My mind conjures up the homey apple spice smells mingling with cinnamon. Throw in smells of fir trees and pine boughs used to decorate the house and lovely memories form.
Ingredients:
4 peeled, cored, sliced Gala apples
1 1/2 Cups Bisquick
1/2 Cup Sugar
1/2 Cup Buttermilk
2 Egg Whites
1/4 Teaspoon Almond Extract
1 Tablespoon Melted Butter
2 Tablespoons Sliced Natural Almonds
2 Tablespoons Melted Apple Jelly
Basic Preparation:
- Preheat the oven to 350 degrees.
- Prepare a tart pan that has a removable bottom – I use a cooking spray.

- Peel, core and slice apples.
- To make a pretty look, form the slices into apple halves.
- Combine Bisquick and Sugar. Whisk in the Buttermilk, egg whites and the almond extract.
- Transfer batter to pan and top with sliced apple “halves.”
- Brush the top with the melted butter.
- Bake in the preheated oven for 30 minutes.
- Sprinkle on the sliced almonds. Then bake for another 10 minutes or until a lovely golden brown color forms and the test toothpick comes out clean. Don’t overbake.
- Cool on the rack.
- Finally, brush the top of the cake with the apple jelly.
The cake allows the baker to take many liberties based on personal taste or a change for the taste buds. Experiment with different apple types. I’ve even tried four different apples on one cake. We definitely have favorites in our family but concensus points to the Galas. You can try glazing over the apples, you can try a light pudding mixture, or a raspberry jelly. I’ve used 100% juice and thickened it as a glaze. I’ve never tried Cider but that might give it a little punch. I especially like the cake topped with Streussels and it turns into a coffee cake.
Get creative. Most of all, enjoy it.
